绿苋菜和红苋菜。
苋菜的营养价值很高,不仅热量低、膳食纤维丰富、蛋白质含量高,更是含铁量第一的蔬菜,富含钾、钙、镁等矿物质,维生素A及B6含量也相当高,可抗氧化、促进新陈代谢,帮助细胞黏膜修复、护眼,很适合素食者、减肥者或三高患者食用。

苋菜的维生素A、β-胡萝卜素含量多,也富含维生素E,护眼效果佳。红苋菜的维生素A含量更是超高,几乎是白苋菜的4倍,红苋菜的β-胡萝卜素含量也与白苋菜相差了近4倍,提高了抗氧化力,具有细胞膜黏膜保护作用,加上有维生素E,可以让细胞膜结构健全,可说是视力保健及呼吸道保养的好食材。
值得注意的是,苋菜的维生素B6含量丰富,每100克白苋菜中有0.01毫克含量,红苋菜更高有0.12毫克含量,相差10倍以上。
维生素B6可帮助蛋白质代谢,让蛋白质的合成速度加快,且苋菜的膳食纤维多,推荐想减肥的人可吃苋菜汤。此外,红苋菜含有胺基酸成分,其中以麸胺酸含量最高,对于肠道黏膜、伤口黏膜及胃的修复很有帮助。
● 苋菜海味豆腐汤
材料 :苋菜120克、板豆腐120克、鲜干贝200克、海苔酱60克、洋葱80克、虾米10克、姜末5克、水1200cc、香油(或芝麻油)30克、料理酒15cc。
做法 :
1.)苋菜洗净切小段,板豆腐、洋葱及干贝切丁块。
2.)锅中加入香油,炒香洋葱、姜末后,加入虾米及料理酒拌炒,再加入水煮滚。
3.)加入板豆腐、干贝、苋菜、海苔酱,煮滚即可。
