他是烹调大大盘福建面的始祖,十多年前把最地道的槟城面加入厦门虾面的元素、及自己再演变成“老房子第一面”的独特味道。
老实说在到处都是福建面的当时、这大盘福建面味道是不错,但经过这几十年来不断研究和熟煮,这大盘面已真正变成拿督陈楚轩的拿手招牌,更有资格成为“老房子餐馆”最后一道上桌的压轴好戏。
拿督如何从兴趣煮食而成为大厨不必再加于描述,因为只要知道汕头街“老房子”的老饕,自然会认识老板兼大厨的陈楚轩,也同样了解餐馆内的“三菜一汤”、有什么我煮什么你吃什么的个性。
当年就是因为前上司锦昌常带我们上那儿吃饭,餐厅没有菜单就供应"吃就对了"的午餐……

这几年我也吃过好多回的大盘福建面,真的越煮越好而且已变成陈楚轩独特的手法,汤头鲜美清甜、单一佐料大虾新鲜可口,再加上自己炸的油葱及猪油渣,真的非常好吃。
当然第一道上桌每人一盅“佛跳墙”,汤内的鲍鱼、海参、鱼翅和瑶柱绝对料足物美,接着的“厦门烤鸭”烤得香喷喷,配上南洋风味的黄梨、大葱、葱段和黄瓜等,裹进薄饼皮内吃起来好爽口,因为蔬果菜调和又有鸭肉香、口感特别棒。

“大虾沙拉”内的菠萝蜜是美味的亮点,最后大海捕捉的“清蒸小石斑”,因为新鲜炸起的猪油渣加持好吃到不得了。
这一晚虽吃得再熟悉不过的佳肴,但可以看出陈楚轩的坚持和不断的改进厨艺,让最local n simple的食物变得经典亮丽。

不怕,肯定强。
当无所怕无所惧的时候,狠起来就是最强。
