“年轻人,想吃什么?”食摊老板问道。 “来一碗云吞面吧!”每次来到小食中心我总会毫不思索地点云吞面来填饱肚子。
自小,我对云吞面便情有独钟,无论去到哪儿,必定会寻找当地的云吞面来尝尝,以解口腹之瘾。
从小到大,我涉足西马各个州属,踏遍许多地区,吃过几百个不同档口的云吞面,逐渐对这道面食颇有要求。
基本上,好吃的云吞面必须具备几个条件:面条必须弹牙爽口无碱水味,酱汁入面,云吞则应当鲜美润滑,并泡在热腾醇香的汤底内,才能让人回味无穷。除了主要的面和云吞,还得配上几片色泽自然、硬度适中的叉烧,另外撒上一撮猪油渣和些许菜心作为点缀。当然,有的地区会将叉烧换成皮脆肉香的烧肉、浓郁的咖喱鸡、脆皮且肉感结实的烧鸭等,以迎合顾客们的口味。目前我吃过最奇特的还属在酱料上出奇招的笨珍茄汁云吞面,还真让人留下深刻的印象。
云吞面这道看似简单的面食,要煮得美味并不容易。虽然本身厨艺不精,但经常观察云吞面的烹饪过程,久而久之也略懂一二,深知过冷河、烫面、制酱等步骤及诀窍,将决定一道面食的成败。享用过各式各样的云吞面,当中不乏让人口齿留香的,也包括难以下咽的“完蛋面”。
通过品尝这么一道面食,我发现烹饪其实最重要是用心。同样是云吞面,但因为每个人的用心程度不一样,成果也随之不同。要把一碗面做好必须要在学习、步骤、食材、烹饪等方面着手,方能赢得顾客青睐。或许刚开始时成果并不如意,但只要有心改进,慢慢地将会在美食界崭头露角,打响自己的名号。当然,用心这事儿并不只是限制于云吞面这道食物上,烹煮炒粿条、椰浆饭、肉骨茶、鸡饭、虾面等美食,都应当有同样的认真态度。
烹煮食物也好,做人也罢,最重要的是要用心去实践与完成,否则将诸事不成,更别说让人感到称心如意了。将来若有人问起,世上最好吃的食物是什么?我会告诉他:“用心,才是世上最美的烹调。”
