一个人吃饭在外面吃饭,选项不多,开菜单点菜绝对不现实,点一个菜嫌少,点两或者三样菜,吃不完就等于浪费粮食。在亚洲还算好,这种浪费行为在欧洲绝对招人嫌、招惹骂架与批评。
经过理性筛选,最后选择往往就剩下单点项的炒饭、炒面、米粉、粉丝、粿条、年糕等。不想涉及炒,就吃汤面、卤面等,简单就好。不过,可能在南方出生,年轻时候在以米饭作为主食的地方生活,偶尔会点面、粿条等,但主要还是吃与米有关的主食。与米饭有关而不点菜,最后的选项,就剩下了炒饭。简单的炒饭,经过味蕾的衍生与变化,逐渐出现各种不同类似的炒饭。
在马来半岛,到华裔餐厅吃炒饭,最普遍的就是扬州炒饭与蛋炒饭。后来,慢慢出现咸鱼炒饭、小江鱼仔炒饭等,还是炒饭,不过因为辅料有所不同,带来不同的味蕾经验。
泰国也流行炒饭。除了加泰国调料,具备酸辣味道的泰式炒饭,还有加些水果味道的黄梨炒饭。不知道是否因为美观或者艺术方面的考虑,普普通通的一道炒饭,以黄梨作为承载工具,算是借助原材料的一种展现方式。我对黄梨炒饭感觉一般,倒是家里的小孩,对这种炒饭特别有食欲。
我一位很爱吃炒饭的朋友,无论正餐吃得多饱,餐后,还是嘴馋地点一道炒饭。当然,他多数以退为进,提起炒饭的时候,总是说:“你想品尝这家餐馆的炒饭吗?”其实,想吃炒饭的,就是他。偶尔我想到恶搞,就对他说:“不如点一盘炒面。”
事实上,我也挺喜欢吃炒饭,特别是以新鲜基围虾、鸡蛋和叉烧炒等炒起来的饭。若是加点咸鱼,味道就更好。
记得有一次在马来友族家里吃炒饭,他们家还特意加了一种香花。以花卉熏陶的炒饭,有一种独特的香味。在东南亚常年盛夏的地方,无论是茉莉、荷花等花卉添加味蕾的吸引力,绝对是炎热天气最为开胃的膳食。
